Key Lime Pie

This really is one of my favourites. Deliciously light and refreshing. This Key Lime Pie is made with avocado's so it's super healthy, very tasty, and so simple and quick to prepare.


Things you will need:

  • 8" Round loose base cake tin. Line the bottom with grease-proof paper.

  • Blender.

  • Food processor.

Ingredients for base:

  • 250 g Almonds

  • 3 tbsp Coconut Manna

  • 3 tbsp Coconut oil, melted

  • handful of dates, optional


  • ​3 Medium sized ripe avocado's

  • 3 or 4 Limes (juice & zest)

  • 3 tbsp honey or agave

  • 4 tbsp melted coconut oil


To make the base:

  1. Place the coconut manna and coconut oil in bowl and melt over a pan of boiling water (bain-marie).

  2. Place the almonds in a food processor and pulse, not too finely to leave some texture.

  3. Add the melted coconut manna and oil and pulse again.

  4. Place into the prepared tin and press down firmly with the back of a spoon, and place in the fridge to chill.

To make the topping:

  1. Place the avocado into a blender along with the honey and melted coconut oil.

  2. Grate the zest of the limes (reserve a little for decoration) and add this, along with the juice. Whiz together and simply empty contents onto the nut base. Decorate with a little grated zest, and enjoy!
