Raw Christmas Mini Puds
If you are looking for a healthy treat this Christmas, one that is gluten free, dairy free and sugar free, then this yummy recipe is for you. These raw mini puddings are simple to make and are a healthy alternative to the usual festive indulgences.

You will need:
Desiccated coconut to decorate
Festive mini cases
50g Dates 80g Golden sultanas
50g Dried apricots
60g Dried cranberries
130g Ground almonds
Zest of 1 orange
Juice of 1/2 orange
1. Place all of the ingredients into a food processor and blend well until mixture holds together.
2. Divide into small balls (roughly 47g per ball) and roll into shape with the palms of your hands.
3. Place into small decorative mini cases and sprinkle with fine desiccated coconut. I whiz my desiccated coconut in my blender and then sprinkle over the balls using a sieve for an even layer.

Make ahead of time and freeze.
Use brazils in place of walnuts.
